Menu Planning Monday

impossible pumpkin pie (Thanksgiving test recipe)
chocolate banana cupcakes with peanut butter frosting

steel cut oats with berries, apples or pumpkin
oatmeal muffins
whole wheat flax pancakes

lunches

salad & soup
bean burrito

dinners
Mussaka with whole wheat couscous and broccoli
potato & black bean soup, cornbread (from a vegan mix), salad
Soyrizo & potatoes in store bought hand-pressed corn tortillas with tomatoes and (homemade) tofu sour cream
tempeh "chicken" salad (will add dried cranberries) sandwiches, couscous veggie salad
vegetable and "sausage" calzones and salad
Thai rice noodles with fresh mint

The Mac and Cheese is actually from a box I purchased awhile ago...I found in my pantry and need to use up. :-)
But, here is a place where I found a recipe that you could make. It got good reviews. I have yet to try it. I may try it out though. My husband is pretty much vegan....and my girls too. Occassionally, we eat fish and we eat cheese not too often. I usually use soy products. I try not to use too much processed foods and rather whole foods. But, that doesn't happen all the time.
