Oatmeal Chocolate Chip Cookies

Inspired by Fat-Free Oatmeal Cookies at

Yield: 24 BIG cookies

2 cup Quick oats
1 cup White flour
1 cup Whole wheat flour
1 tsp. Baking soda
1 tsp. Salt
2 tsp. Vanilla
1 cup Brown sugar
1/2 cup White sugar
3 tblsp. flax seed meal
1 cup vegan chocolate chips
1 cup Apple sauce
4 tsp. Egg replacer powder
4 tbsp. Water

Preheat the oven to 375.

Mix the dry ingredients and the chocolate chips in a large bowl. Whip the egg replacer with the water, mix in the apple sauce. Add apple sauce mix to dry mix. Stir well with a hefty spoon until everything is combined. Drop onto a parchment paper covered cookie sheet. Bake for 12-13 minutes.

*These cookies are almost like a cookie shaped muffin top. Very good but obviously low fat.
